Decade of Dive: Volume 1
To honor Dive on its upcoming 9th anniversary, I’m taking a personal look back on Dive in the early days and lessons learned as I look forward to our future. I’ll be posting a quarterly written & videoblog in anticipation of our 10-year milestone – and I hope you enjoy my favorite stories, recipes, exciting announcements, and more with A Decade of Dive.
Exactly nine years ago today, I officially opened the doors to my very first concept, Dive. After years of working in the industry, I was ready to test myself and my training. I created every recipe as a reminder of home and growing up. I pushed myself to put my heart into every detail of Dive, and that resonated with the community.
Check out some of the memories from when we first opened… You’ll recognize a lot of our same staff and dishes. But not that same menu board! Each week, it would take HOURS to write out. My hand is thankful we don’t have to do that anymore.
I first envisioned Dive as a fresh, healthy, fast foodie restaurant but it evolved into a special, family-friendly concept with a staff that was loyal to my ideas and a customer base that appreciated quality. When I looked around to what we had built together – I realized Dive could never be a corporate chain restaurant. It wouldn’t be as special. It wouldn’t be as anchored to its community. I’m so pleased to give families a place to spend time together and to watch children grow up. I’m honored to watch kids grow up and then go to college – only to return for their Dive “fix” … I couldn’t ask for a better compliment.
Over the years, we’ve built followings to some of our signature items. Some things will never, ever be taken off the menu – and we’ve highlighted them in our new menu. The famous Dive Wrap and Seared Ahi Tuna Wrap, Hearts of Palm Salad, Kale and Quinoa Salad, Ceviche, P.E.I. mussels, Surf and Turf, Del Mar Tacos, Crispy Cod Sandwich, Steak Wrap, and the Key Lime Pie have all made the cut from day one.
I’ll never forget how fast the deliciousness of the Ahi Tuna Wrap spread by word of mouth. At first, I got frustrated when people would only try that one thing. I wanted them to try everything! Inspired by the love for existing dishes, I became more creative and confident with new recipes – introducing unique specials whenever I feel the urge to do so. Each season, I am pushed to make things feel fresh and different.
This year, we’ll be bringing back some of those recipes throughout the 10th year of Dive to celebrate my favorite creations. Things like the Mojo-Style Seared Mahi, or Shaved Brussel Sprout Salad, or long-time favorite Agave Chicken Salad.
With high-quality ingredients in abundance, the least we can do is throw them together in delicious and unexpected ways! Thank you for giving me this platform and canvas for recipe design and production that stems from the heart.
And me? I’m just getting started with what I want to share with the world. I’ve got passion for health, holistic wellness, fighting for clean eating and a future for our children, finding purpose and positivity in creating fun ways to live and eat – and I can’t wait to share these things with you.
